Leon and Diane Letoto explains the nuances of Chinese Dietary Therapy at Hawaii Healing Garden Festival

Leon Letoto L.Ac has been sharing the finer points of understanding "Food is Medicine" at the Hawaii Healing Garden Festival  where he has been presenting a series of lecture/demonstrations on Chinese Dietary Therapy across the state in 2007 as a main  featured presenter at the Hawaii Healing Garden Festival. Here is assisted by his  wife Diane Letoto at Waimea Valley, Oahu.

Phoenix Soaring in the Clouds Soup

Lamb, Ginger and Danggui Jiaozi

Phoenix Soaring in the Clouds Soup


Indications: 
This soup nourishes the lung and Qi.  It boosts Lung Qi and yin, relieves asthma, moistens lungs, and alleviates chronic fatigue.

INGREDIENTS
1    Chicken, Gallus domestica
2    Silver Ear Fungus, Tremella fuciformis Tremellaceae
60 GM    Astragalus, Astragali Radix
60 GM    American Ginseng, Ginseng Radix
30 GM    Solomon seal,
.5 LB    Dry Scallops
1 cup        Lily Flower
1 cup    Black mushroom
10 slice    Fresh Ginger
To taste    Shaoxing wine or other high quality liquor
 
DIRECTIONS: Soak all herbs overnight in water except for the ginger and gingko nut.  Shell the gingko and remove the skin.  Add all ingredients to the ginseng cooker and fill the water to the top.  Place both lids onto the ginseng cooker and place it in a larger pot and fill the outer pot with water until it reaches the handles.  Cook on medium heat for 2 hours.  20 minutes before shutting off the stove add the apricot seeds.

SUPPLEMENTAL INFORMATION:
    Astragalus is a Qi Tonic entering the spleen and lung channels.  It is sweet and mild flavored, warming herb used mainly to enhance the immune system and tonify Qi and yang.  It is indicated for diaphoresis, weak Weiqi, clear swelling, diuresis, external vacuity spontaneous sweat, night sweat, Qi and blood vacuity and spleen vacuity diarrhea.  The general dose is 9 - 15 grams.  For proteurea, numbness and nephritis the dose can be increased to 30 - 60 grams.
Solomon Seal root is a Yin Tonic that is sweet and neutral herb that enters the lung, stomach and kidney.  The dose is 6 - 9 grams.  It is indicated for nourishing yin, treat yin damage in febrile disease (steam), moisten dry, clear vexation, clear thirst, relieve cough, vacuity taxation with fever, frequent urination and quick digestion causing quickening of hunger pain.  It is contraindicated for damp stagnation.
    Silver Ear fungus is sweet and neutral herb entering the ling, stomach and kidney.  It is mainly used to nourish yin and stomach, moisten lungs, increase saliva, resolve lung heat and dryness, dry cough due to pulmonary tuberculosis, weakness due to chronic disease.

 
Lamb, Ginger and Danggui Jiaozi
Indications: warms the center, invigorates blood and Qi, clears blood heat, regulates menses

80    Wonton Skins
1.5 LB    Lamb – ground, increase  Qi, warm center burner
1 bunch    Chives – minced, warm kidney yang, astringe sperm, pain in lumbar/knees
10 grams    Danggui – blood regulator, hematonic, regulate menses
1 cup     Mushroom – soaked and minced, anticancer, lowers cholesterol
1 cup    Black fungus: clears blood heat, strengthen Qi and blood
6 cloves    Garlic – finely minced
¼ cup    Ginger – grated
½ cup    Chicken broth or tea
To taste    Salt, pepper, oyster sauce, shaoxing wine or sherry
 
Directions: Add all of the ingredients to a bowl and mix them thoroughly.  As you make the dumplings, stack them in a plate in one tier.  Do not place one tier of dumplings on another tier or the juices may run and make the dumplings stick together.
    To cook boiled dumplings bring a pot of water to a boil add several dumplings to the pot.  Do not add too many dumplings at one time or you may have a problem retrieving them when thy are done.  When the dumplings are cooked, they will float to the surface and you can retrieve them with a wire net.
    To fry-steam the jiaozi add oil to a medium heat pan and when the oil begins to smoke add a row of jiaozi stacked closely to one another into the pan.  When the dumplings start to brown turn them over.  Add some water and cover the jiaozi.  This will allow the dumplings to steam and complete the cooking process.

Mutton – sweet, warm, SPLEEN KIDNEY
FUNCTION: increase Qi, tonic for general weakness and fatigue, warm middle burner, relax the bowels, lassitude in loins and knees, postpatum deficiency-cold, abdominal pain, periumbilical colic due to cold invasion, regurgitation due to weak middle burner

 

Steamed Danggui Chicken
EFFICACY: Blood tonic, invigorate blood, lubricates intestines by increasing peristalsis, regulate menses, headaches due to blood deficiency, chest and abdominal pain, amenorrhea, menorrhalgia, regulates functional bleeding, uterine regulating effects, antibacterial

INGREDIENTS
1 LB    Fresh chicken
1/2 C    Black fungus: presoak for 1 hour
1 C    Shiitake Mushrooms: presoak dried material for 1 hour and massage
1 C    Lily Flower – presoak dry flowers for 30 minutes
5 TBS    Soy sauce
3 TBS    Oyster sauce
1 TSP    Fresh ginger: grated or julienne
4    Garlic cloves crushed
10 GM    Danggui: presoaked in water for 1 hour
3 clusters    Anise
1/2 TSP    Sesame oil
1 TSP    Raw sugar
2 TBS    Shaoxing wine or other good quality wine
1/4 C    Green onions: cut into 1 inch pieces
To taste    Salt, Pepper

DIRECTIONS: Add all ingredients to a ceramic bowl.  Steam for 15 minutes.

CHICKEN, sweet, warm, SPLEEN LIVER KIDNEY
FUNCTION: jing tonic, warm the middle burner, strengthen Qi, increase marrow, convalescence when weak and deficient, urinary deficiency, anorexia
ALCOHOL: bitter sweet pungent warm toxic HEART LIVER LUNG STOMACH
FUNCTION: invigorate blood, clear cold pathogen, enliven spleen, warm zhong jiao, promote immediate affect of herbs, arthralgia due to wind cold, muscle spasm, obstruction of qi in chest, cold and pain in chest and abdomen
GREEN ONION: pungent, warm, LUNG STOMACH
FUNCTION: clear superficial syndrome, activate yang, detoxify toxic material, clear chills fever and headache due to exogenous febrile disease, abdominal pain due to yin cold, ascaris intestinal obstruction, constipation, urochesis, dysentery, carbuncle, swelling
GINGER: pungent, fresh ginger warm, dry ginger hot SPLEEN LUNG STOMACH
FUNCTION: Fresh ginger – relieves exterior syndrome, disperse cold, arrest vomiting, resolve sputum, wind-cold vomit, wind-cold productive cough and wind-cold chills.  Dry ginger – warms middle burner, eliminate pathogenic cold, revives depleted yang, invigorate blood circulation, cold pain in chest & stomach, vomit, diarrhea, cold extremities, faint pulse, asthma and cough due to fluid retention caused by internal cold, joint pain due to wind-cold-damp, hemoptysis, nose bleed, yang vacuity hemafecia
PEANUT OIL – sweet, neutral, SPLEEN LUNG LARGE INTESTINE
FUNCTION: spleen tonic, moisten lung, loosen bowels to remove parasite, moisten intestine, vermifuge
BLACK OR WHITE PEPPER: pungent, hot, STOMACH LARGE INTESTINE
FUNCTION: warm middle burner, descend Qi, clear phlegm, treat cold phlegm & food stagnation, cold pain in the abdomen, regurgitation, watery vomit, diarrhea, cold dysentery, External: treat skin & exterior disease, poisonous snake or dog bite, detoxicant
SALT: salty, cold, STOMACH KIDNEY LARGE INTESTINE SMALL INTESTINE
FUNCTION: cool blood, induce vomit, resolve phlegm, clear heat, detoxicant, food stasis in stomach chest, stomach distention, difficult urination and defacation, bleeding gum, sore throat, toothache, skin disease, insect bite
SOY SAUCE - sweet, salty, neutral, LUNG SPLEEN
FUNCTION: aid digestion, reduce pain from bee & wasp sting, pain due to scalding
SUGAR - sweet, neutral, LUNG SPLEEN
FUNCTION: invigorate middle burner, replenish Qi, moisten lung, regulate stomach, treat cough and asthma due to dry lungs, deficient lung, wind cold pathogen, fatigue due to overwork, infantile malaria, fasting dysentery, aphthae, toothache due to pathogenic wind fire
BLACK FUNGUS: sweet, even, STOMACH LARGE INTESTINE
FUNCTION: clear blood heat, nourish Qi, urinary stones, lower high blood pressure, blood dysentery, uterine bleeding (beng lou), stops bleeding
BLACK HAIRY FUNGUS: sweet, even, KIDNEY LIVER LUNG
FUNCTION: promote and nourish qi and blood, moisten lung, stop bleeding, anti-tussive, hematuria, high blood pressure, uterine bleeding, spitting blood
GARLIC: acrid, warm, SPLEEN STOMACH LUNG
FUNCTION: promote circulation of retained Qi, warms spleen and stomach, remove abdominal mass, detoxicant, vermifuge, teats retention of food , cold and pain sensation in abdomen, hydpros, turgor, diarrhea, dysentery, malaria, whooping cough, boils, pyogenic infections, tinea capitis, snake bite
LILY FLOWER: sweet, even, HEART LIVER SMALL INTESTINE  
FUNCTION: It promotes channel circulation, increases appetite, clears pediatric epistaxis due to heat or dry-fire symptoms and not functional or trauma, clear lung heat, invigorate weak liver qi, lily flower with meat soup clears liver fire with exuberant dryness, excess liver fire and other liver disease except cancer, contraindicated in spleen stomach damp heat, tonify spleen vacuity and treats chest conditions.


  Three Mushroom and Chinese Celery Stirfry

EFFICACY: This delicious vegetarian dish smooths the energy action of the liver, calms liver heat, replenish Qi and blood, clears blood vessels, anticarcinogenic, lowers cholesterol, detoxifies blood, and tonify kidney and liver yin.  Hence, this is a perfect culinary recipe for those suffering from high blood pressure, dizziness due to hyperactive liver yang, hyperlipemia, arteriosclerosis and high cholesterol.

INGREDIENTS:
8    Fresh Chinese celery stalks: slice into stalks about 3” x 1/4" strips
10    Black mushrooms: soak dried mushrooms 1 hour, massage, slice into thirds
1 cup    Wood Fungus: soak 1 hour and wash thoroughly
2 cups     Enoki Mushroom: cut roots off
2 cups    Eryngii Mushroom: slice into bite size pieces
8    Clove garlic: crush
2 TBS    olive oil or any other high quality cooking oil
1 TBS    sesame oil
2 TBS    soy sauce
to taste    salt, pepper

DIRECTIONS: Add 1 tablespoon of oil into a preheated pan.  When the oil starts to flow freely add the garlic.  Be sure not to over cook the garlic or it will become bitter.  Add celery, soy, 1 tablespoon of sesame seeds and pepper.  When the celery is cooked but still crunchy add salt and sesame oil.  You may need to add some water to retain the moisture of your vegetables.  Remove celery and cook the rest of the ingredients the same way.

CELERY - sweet, bitter, cool, STOMACH LIVER
FUNCTION – calm liver, clear heat, expel wind, remove damp through diuresis, treat hypertension, vertigo, headache, flushed face, conjunctival congestion, dysentery with bloody stool, carbuncle and swelling, cataracts and nebula.
ENOKI MUSHROOM, VELVET FOOT: sweet, neutral, SPLEEN STOMACH
FUNCTION: anti-tumor, anti-carcinogenic, activates immune system, anti-bacterial, reduces elevated blood glucose levels, reduces high cholesterol, reduces high blood pressure, contain flammulin: anti-cancer & anti-tumor, 14 day shelf life refrigerated
MAITAKE MUSHROOM: sweet, neutral, SPLEEN STOMACH
FUNCTION: suppresses growth and metastasis of tumors, activates immune system, SX Fraction reduces blood glucose, normalize serum lipids, reduces high blood pressure, protects liver damage, lower LDL (bad cholesterol) raises HDL (good cholesterol), Hen of the Woods, 30 day shelf life

SHIITAKE MUSHROOM:
sweet, neutral, SPLEEN STOMACH
FUNCTION: anti-carcinogenic, enhances T cell function, anti-viral, regulates immune system, lowers bad LDL cholesterol, and lowers high blood pressure.
KING TRUMPET MUSHROOM, ERYNGII: sweet, neutral SPLEEN STOMACH
FUNCTION: anti-carcinogenic, anti-tumor, regulates immune system, lowers cholesterol, and the high fiber content is helpful in promoting good bowel function, beta glucan found in these mushrooms have anti-oxidant properties that may prevent cancer metastisis, 12 day shelf life, best tasting and textured mushroom
